1/4 cup soy flour3/4 cup wheat flour1/2 cup ground flax seed1/4 cup Splenda brown sugar1/4 cup Splenda or Stevia1/4 tsp nutmeg1/2 tsp salt1 tsp baking soda1/2 tsp baking powder1 cup oats3/4 cup egg beaters2 small bananas3/4 cup applesauce3/4 cup dried blueberries1/4 carob or semi sweet chocolate chipsPreheat oven to 350 degrees. In a large bowl, stir together dry ingredients. Add eggs and applesauce. Mix thoroughly. Add blueberries and chocolate chips. Mix thoroughly. Spoon into muffin tins sprayed with Pam and bake at 350 for 25-30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
