Nutty Pilaff with Brown Rice

1 tbsp olive oil1 medium onion, peeled and chopped1 medium red pepper, washed, deseeded and diced1 medium celery stalk, washed and diced3 cloves garlic, peeled and diced1 cup sprouted brown rice2 1/4 cups vegetable stock1 tbsp dried parsley1/2 tsp sea salt1/4 tsp black pepper1,4 cup natural slivered almonds
Heat the oil in a pan, add the onions, pepper, garlic, and celery, saute` until soft. Stir in the rice, vegetable stock and seasonings. Bring to a boil. Cover and cook on medium for 35 minutes or until rice is tender. Fluff the rice, stir in the nuts. Let stand 5 minutes. Serve hot.
