Chocolate banana baby muffins

1 1/4 cups spelt flour1 cup oatmeal baby cereal1/4 cup brown sugar/cane sugar/sucanat1/3 cup cocoa1 tbsp baking powder1/4 tsp baking soda3 very ripe bananas, mashed1/2 cup soy milk/rice milk1/3 cup oil1 tsp vanilla
Pre-heat oven to 400 degrees and line or spray a muffin pan.
In a large bowl, combine the spelt flour, oatmeal cereal, brown sugar, baking powder and baking soda.
Using an immersion blender, blend together the bananas, soy milk, oil and vanilla.
Add the wet ingredients to the dry ingredients and stir just to combine.
Drop the batter into the muffin cups. Bake 10-12 minutes for mini-muffins, or 20 - 25 minutes for regular muffins.
Serving Size: 24 mini-muffins or 12 regular muffins
