Roasted Mango and White fish

Ingredients
Mangos, 2 fruit without refuseOnions, raw, 1 medium (2-1/2" dia)Jalapeno Peppers, 2 peppers or to tasteCanola Oil, 1 1tspCider Vinegar, 1 tbspFresh Chives, 3 tbsp choppedCucumber (with peel), 2 cups - 1 cm piecesWhite fish like colely 500g
Directions
1.Pre-heat oven to 425вк. Peel and dice the mango into one inch cubes and mix with diced onions, pinch of salt, and canola oil. Place in a baking pan and let roast for 20-25 minutes- onions should be soft.
2.Combine roasted ingredients with the vinegar in a food processor and begin adding your pepper . Pulse until everything is well combined and you have the right level of spicyness in your salsa.
3. Add cucumber and chives (or green onions for colour)
This can be made ahead if you wish
4. Grill fish - usually takes about 4 minutes (cooked when flakey)
