Banana Carrot Walnut Quick Bread

Ingredients
4 eggs, large2 C More Fiber Stevia Baking Blend3/4 C applesauce, unsweetened3/4 C canola oil1 C grated carrots1 C bananas, mashed (about 3)1 C chopped black walnuts (or other nuts)1 tsp. vanilla3 C Whole Wheat Flour, pastry1 T baking powder3/4 tsp. baking soda1 tsp. salt (optional)
Directions
Sift together dry ingredients. Put rest of ingredients in large bowl and blend together. Add flour mixture and continue blending until well mixed. Pour into a greased and floured 12" X 5" X 4" deep loaf pan, or two smaller loaf pans. Only fill 2/3 full. Bake at 350 degrees for approx. 1 1/2 hours. Check at 1 hour. If a toothpick comes out clean, it is done.
