Asian Chicken with Brussels Sprouts & Carrots

1/2 c. Soy sauce, low sodium 1/3 c. Rice vinegar 1/3 c. sugar 1 tsp. Molasses (mix with sugar to make brown sugar)3 Tbsp. Ginger paste3 c. Chicken broth (low sodium if possible) 2 lbs. Chicken breasts, boneless skinless, 1 inch pieces 2 c. Carrots, 1/8 inch rounds 2.5 c. Brussels sprouts, thinly sliced1/4 c. Onion, minced
Combine soy sauce, rice vinegar, brown sugar, ginger paste and chicken broth in a medium saucepan and bring to a boil.
Add chicken and carrots and simmer for 15 minutes.
Stir in Brussels sprouts and onion. Continue cooking until the chicken and carrots are cooked through, about 5 minutes more.
Serve over rice, rice noodles or Shirataki Yam Noodles.
