Copycat Panera Mediterranean Veggie Sandwich

Ingredients
2 large slices of bread (I use Oroweat Grains & More Double Fiber)1 tbsp homemade vegan pesto (see tips for recipe--it is SO easy and so worth it)2 slices red tomato (fresh)1 romaine leaf2 tbsp fat-free feta (I used the kind with tomato & basil, to mimic Panera's bread flavorings)1 tbsp pimentoes (found in a canned/jarred food aisle)
Directions
Toast bread.
Spread pesto over one slice, top with pimentoes, then feta, romaine, tomato, and second bread slice. Cut in half and devour!
