Turkey and Vegetable Pasta Sauce

1 pound ground turkey1 large onion, cut up2 cloves garlic, chopped2 cups sliced fresh mushrooms1 package frozen artichoke hearts cooked according to directions (can also use one can artichoke hearts, drained)1 14 oz. can diced tomatoes1 jar marinara sauce1/4 cup red wine3 tbsp. olive oil
Pour olive oil in skillet with cover. Cook onion and garlic in olive oil until onions are clear. Add mushrooms. Cook until mushrooms are tender. Add ground turkey to the skillet and cook until the turkey is no longer pink. Add diced tomatoes, marinara sauce and artichokes. Mix together. Bring to boiling. Reduce heat, add red wine, cover and simmer for approximately 30 minutes. Makes 6 servings of 1 cup each.
