Add flour mixture to shortening mixture and beat on low speed to combine. Using your hands, roll uniform-size pieces of dough (about 2 tsp) into balls. Roll in sugar and bake. Smaller balls yield smaller cookies. Once cookies are completely cooled dip in white chocolate. Melt white chocolate chips with 2 tblspn oil in saucepan or microwave.
