Chili (low sodium with dried beans)

1/2 c dried white beans1 c dried chili beans1 c dried red kidney beans4 oz lean ground beef2 teasp olive oil1 cup chopped celery1 cup chopped onion1 shredded carrot2 tblsp minced garlic2 cans (398 ml) Hunts tomato sauce (no salt added)1 can (28 oz) Pres Choice tomatoes (no salt added)1 tblsp cumin1.5 tblsp chili powder1 tblsp red pepper flakes1 cup frozen corn1 tblsp dried basil
mix beans together and soak overnight in 10 cups water. In the morning, drain and rinse, return to dutch oven, add water to fill pot to one inch from top, bring to boil, reduce heat, cover and cook on low for 1-1/2 hours.
Saute onion, celery, garlic in olive oil til soft, set aside and brown beef in same skillet.
Transfer browned beef and sauteed mix to large dutch oven with cooked beans, add spices, grated carrot and corn and cook, uncovered, on medium for 20 minutes. makes 10 servings
