Potato Cakes

Ingredients
1 Cup leftover boiled potatoes1/2 cup Bisquick1 large egg1/2 tsp Garlic Pepper1/2 tsp Sea salt3/4 cup Lowfat Buttermilk2 Tbsp Extra Virgin Olive Oil
Directions
Mix all ingredients except Olive Oil in a medium size mixing bowl to make a thick batter. Heat a skillet with the olive oil in it over medium heat until hot. Spoon batter into hot skillet and reduce heat to medium low; let cook on one side, then turn with spatula and let cook on other side. Remove from heat and serve hot.
