Gingerbread pumpkin apple minimuffins

Ingredients
2oz water1 oz, 2T lemon or lime juiceapples, peeled and diced small, 2 cups1/2 c applesauce1 can pumpkin, plain 15 oz1 box gingerbread mix
Directions
Preheat oven to 350 degrees. Put 2 oz of water in a medium sized bowl with 2T lemon juice. (Lime juice also works). Peel apples and dice smal, stir gently into lemon water to prevent apples from turning brown. To the bowl with apples and water, add applesauce and entire can of pumpkin. Stir until well combined. Add the box of dry gingerbread mix to the bowl and stir. Put the batter into minimuffin tins. I filled 36 minimuffins. Bake 17-25 minutes, until a toothpick comes out clean.
