1 cup all-purpose flour1/2 cup sugar1/4 cup Splenda3/4 cup nonfat milk2 teaspoons baking powder1 teaspoon salt1 tablespoon butter or margarine, melted8 oz frozen blueberries
Heat oven to 350F. Spray 9" pie plate with cooking spray. In large bowl, stir flour, sugar, milk, baking powder and salt until well blended. Stir in melted butter. Pour into pie plate. Pour frozen blueberries over batter. Sprinkle with crystallized ginger if you like.
Bake uncovered 1 hour or until edges are golden brown and center is set. Let stand 15 minutes before serving. Serve warm.
