Salad:Chicken Breast, no skin, 16 ouncesGrapes, 1 cup, seedlessApricots, dried, 0.5 cup, halvesOnions, raw, 0.25 cup, choppedCranberries, dried, sweetened (craisins), 0.5 cupWalnuts, 0.25 cup, choppedCelery, raw, 0.5 cup, dicedScallions, raw, 0.5 cup, choppedBib Lettuce, 1 headDressing:Mayo with Olive Oil (reduced fat), 0.5 cupCurry powder, 2 tspHoney, 0.67 tbspLemon Juice, 2 tspLime Juice, 2 tsp
Steam the chicken until done, when done cut into bite size cubes. Mix the chicken in with all the other salad ingredients except the lettuce, and set aside. Prepare the dressing by mixing together the ingredients, then pour over the chicken salad and mix together. Serve on bed of lettuce.
