Lemon Greek Chicken

2 t lemon zest1/4 cup lemon juice2 T olive oil4 large garlic cloves2-3 t dried oregano (or sub Italian Seasoning)3/4 t salt1/8 t black pepper2 medium potatoes1 medium red bell pepper, cut into 1" peices1 medium red onion, cut into wedges8 oz fresh whole mushrooms4 chicken breast halves (2.5 - 3 lbs)
Preheat oven to 400. Combine lemon zest, juice and oil. Press garlic into juice mixture. Add oregano, salt and pepper. Set aside.
Cut each potato lengthwise into 8 wedges. Place in a 9 x 13 baker. Add bell pepper, onion, mushrooms and half of the lemon juice mixture; toss to coat. Place chicken on top of vegetables; brush with remaining lemon juice mixture using pastry brush.
Bake 1 hour or until chicken is no longer pink. Brush chicken and vegetables with pan juices after 30 minutes.
