Zucchini, 2 cup, sliced*Canola Oil, .5 cupGranulated Sugar, 1.5 cup*Flour, white, 2 cupCocoa, dry powder, unsweetened, .5 cupBaking Soda, 1.5 tspSalt, 1 tspVanilla Extract, 2 tspSemisweet chocolate, 1 cup chips
Pre-heat oven to 350 degrees. Line a 9x13 pan with parchment paper or grease and flour.Shred the zucchini to equal 2 cups.
Combine sugar, oil, and vanillla in large bowl. Blend well. In second bowl, combine flour, cocoa, salt, and baking soda. Slowly add dry ingredients to sugar mixture small portions at a time. Once all dry ingredients are added the mix will look very dry. That's OK. Now add in the shredded zucchini. Once the zucchini is well incorporated, press mix into 9x13 pan and cook for 25-30 minutes.
As soon as brownies are out of the oven, sprinkle the cup of chocolate chips over the top of the brownies and spread like frosting until melted. When this cools completely it will make a shell like magic shell on the outside of the brownie. Very yummy.
