Chicken Liver Pate

2 lbs Chicken livers (remove all fat)1 large Leek stalk1 cup chopped onion (or scallions)4 cloves of garlic2 Tbsp of chives (or garlic chives)2 Tbsp of fresh parsley1 tsp ground thyme2 Tbsp Raw Honey1 cup white cooking wine3 Tbsp Olive Oil
Don't worry about chopping everything up too perfect because you're just going to throw it all into a food processor anyway.
Chop up the onions, garlic, chives, leeks, parsley and liver. Heat up the olive oil in a pan. When good and hot add all the chopped ingredients. Add thyme and cooking wine. Cook until the livers are cooked all the way through. Use a slotted spoon and place in a food processor reserving the juice. Start to process. Add honey and some of the reserved juice. Add as much juice to get you the consistency of the pate you wish.
Serving Size: makes a bit more than 2 cups
