Awesome Low Fat Low Calorie Vegetable Soup

Ingredients
Sunflower Oil, 1 tbspCelery, raw, 1 cup, diced Baby Carrots, raw, 3/4 slicedGreen Peppers (bell peppers), 1 cup, chopped Green Onions, raw, 1/2 cup, chopped Broccoli, fresh, 1 cup, chopped Swanson Chicken Broth 99% Fat Free, 4 cup Water, 6 cupsYellow Sweet Corn, Canned, 1 cup Peas, frozen, 0.5 cupPortabella Mushrooms, 1 cupNew Potatoes, Slivered, Canned, 1 3/4 cups***Cabbage, fresh, 8 cup, shredded (optional)
Directions
Saute Celery, Carrots, Green pepper in Sunflower oil till semi soft, add Green Onions (scallions) Saute till onions are semi translucent then add broccoli. Continue saute for 2-3 minutes for flavors to marry. Add Chicken broth and water. Add corn, peas, mushrooms, potatoes. Let simmer for 30 minutes.
***Add shredded 1 cup Cabbage to individual bowl then pour 1 cup of soup over the cabbage, which is optional. But this makes it much more filling and crunchy too.

    Very good! tried it over a bagged coleslaw mix (20 cal for 1.5 cups) and it was yummy! - 12/28/13
