Red Beans No Rice (and LOW sodium!)

1 pound dry small red beans, soaked overnight6 cups water1 medium onion chopped4 large stalks celery, chopped.5 green pepper, chopped6 cloves garlic1 tsp. cajun seasoning1 tsp. ground thyme.25 tsp. ground sage.25 tsp cayenne if you like spice2 bay leaves
soak beans overnight or do quick soak, rinse and drain. sautee onion, pepper and celery in bottom of large soup pot or dutch oven with a little cooking spray to prevent sticking, when starting to become translucent add garlic and cook for one minute. add beans and water and bring to a boil. add remaining ingredients, reduce to a simmer and simmer for 2 hours or until beans have become soft and water is reduced by 75%.
