Roasted Tomato and Potatoes

Ingredients
4 potatoes6 plum tomatoes5 tbsp basilSalt and Italian Seasoning to taste2 tbsp olive oil
Directions
Chop potatoes and tomatoes into small squares.
Put in bowl.
Add salt, basil, seasonings and olive oil.
Mix together.
Bake at 450 degrees for 40 minutes or until potatoes are soft.

    it was good but both my husband and I thought something was missing. the poatoes just were a bit plain, the tomatoes were great though and the whole thing was great with ketchup. - 8/1/10

    Excellent! I don't know why this wasn't rated higher. I used fresh basil, threw in some fresh parsley, and I made my own Italian spice mix using dried basil, parsley, oregano, onion salt, garlic powder, thyme, rosemary, and pepper. People who find this recipe bland should add more spice. - 3/29/09

    I stopped at three tbsp. of basil and i only had red potatoes so I used 8 of them, It was delicious and I would make this again for sure. - 2/25/08

    It was way too much basil for us. It calls for 5 tablespoons (tbsp) I believe it should have been teaspoons (tsp) - 1/11/08
