Sue's Rice Muffins

Ingredients
1 Egg1/2 C liquid (water, Sugar-free Juice, milk, etc.)2 Tbsp Sugar2 Tbsp Canola Oil1 C White Rice Flour2 tsp Salt2 Tbsp chopped Nuts, 1/4 C raisins or chopped Dates, 1/4 C Blueberries, or 2 Tbsp Carob Chips (optional)
Directions
MIX in 1 Qt measuring pitcher until well mixed (I used my hand held electric mixer).

BAKE in greased 6 cup muffin tin at 425 degrees for 17-20 min.
