Pasta with creamy Vegetables & Chicken

2 chicken breasts (approx. 1 lb)1 medium zucchini1 8oz container mushrooms8 oz whole wheat rotini or penne rigate0.5 cup water0.5 cup sour cream, reduced fat1 packet onion soup mix1 tbsp garlic, minced
Cut chicken strips into small slices. Cut zucchini into small pieces and slice the mushrooms. Mix sour cream, water and onion soup mix.
Spray a non-stick skillet with cooking spray and brown the chicken. Add garlic and vegetables and cook until zucchini is tender. Pour the sauce over the chicken and vegetables, bring to a boil then turn heat to low (or even better, turn burner off to save energy).
Cook pasta according to package directions, drain.
Once chicken/vegetable sauce is done, remove from oven and mix with pasta. Serve.
Makes 4 2-cup servings.
