1 cup dried Quinoa, cooked with chicken broth1 cup chopped of the following:onioncarrotsbroccolired pepper1 can black beans, drained and rinsedextra virgin olive oilcumin powdersaltgarlic powder
Heat olive oil in pan. Saute broccoli, carrots, onion and red bell pepper until soft. Add black beans and spices. Add quinoa. Stir well and serve.
