Easy Mediterranean Couscous Salad

Ingredients
16 oz low sodium chicken broth1 Cup dry whole wheat couscous1 can chickpeas (garbonzos) drained1 Cup sliced scallions1/2 Cup sliced black olives1 Cup crumbled or shredded mozzarella or feta cheese1/2 Cup Italian vinaigrette dressing
Directions
Bring broth to a boil, stir in couscous, remove from heat and let stand for 5 minutes. Transfer to large bowl, fluff with a fork and let stand for another 5 minutes. Fluff again. Stir in garbonzos, scallions, cheese and olives. Toss with dressing and serve on a bed of lettuce.
