Easy Brown Rice and Turkey Casserole

Ingredients
Ground Turkey2 cups (cooked ) Brown RiceCan of Rotel TomatoesCan of tomato sauce2 cups fresh spinach - chopped.5 cup carrots chopped.5 cup chopped onion.5 cup chopped green pepper1.0 cup 2% shredded cheese1 TBS Olive Oil3 cloves crushed garlicsalt and pepper to taste (the Rotel are salty enough for me, I do not add extra salt)
Directions
Prepare brown rice as directed on package
In separate large pan:
Cook onions, green pepper, carrots in olive oil until soft.
add garlic for two minutes
Add turkey brown
add spinach and can of Rote
Cook until liquid almost gone
Remove from heat
Add can of tomato sauce and cooked brown rice- combine and pour into 13x9 casserole dish
top with cheese and bake at 350 for 3o minutes covered
remove cover and bake for additional 10 to 15 minutes.
