5 medium apples, different kinds, cored and peeled, chopped into piecesLemon juiceWet Ingredients:3 large organic free-range eggs 1 cup packed organic light brown sugar 1/2 cup organic cane sugar 2 teaspoons bourbon vanilla extract [or use Kosher vanilla powder, to taste] 3 tablespoons extra light olive oil 1/4 cup sour cream Dry ingredients: 2 cups almond flour aka almond meal 1/4 cup rice or sorghum flour 1/2 cup potato starch or tapioca starch 1-1/2 teaspoons baking powder* see notes 1 teaspoon baking soda 1 teaspoon McCormick Apple Pie Spice 1 teaspoon ground cinnamon or cardamom 1/2 teaspoon fine sea salt Read more: https://glutenfreegoddess.blogspot.com/2007/03/flourless-apple-cake.html#ixzz1uMDPjeyO
Directions
spritz the apple pieces in lemon juice.
Preheat oven 350 degrees Fahrenheit. Line a deep cake pan with parchment paper and oil it.
Whip the eggs and sugar together til smooth, add in the other wet ingredients.
Mix the dry ingredients in another bowl. Gradually add to wet.
put half apples in and half cake mixture. mix up together. Add in the other half apples and half cake mixture. Repeat.
Cook in oven for 60-70 minutes
