Chicken Mushroom Stroganoff

Ingredients
500g chicken fillets, skin removedPaprika1 large onion1 teaspoon garlic2 tablespoons chopped parsley200g mushrooms, sliced1/2 cup low-fat natural yogurt1 tablespoon tomato paste2 teaspoons of corn starch
Directions
Slice Chicken into thin strips. Sprinkle lightly with paprika.
Cook in a non stick pan until browned. Remove chicken.

Add onion, garlic, parsley and cook until softened, adding a little water when necessary.

Add mushrooms and cook for 2 minutes. Return chicken to pan.

Blend yoghurt with tomato paste and corn starch until smooth. Stir into chicken mixture and simmer for five minutes.

Serve with pasta/rice and green vegetable
