Eggplant Puttanesca on Shell Pasta

Ingredients
85 Grams Shell PastaSpray of cooking spray1 cup cubed eggplant1 cup chopped tomatoes1 oz kalamata olives, minced1 tsp basil (ground) or 1 tbsp (fresh)1 oz soft goat cheese
Directions
Cook the pasta according to directions. Drain.
Cook the eggplant in a fry pan sprayed with cooking spray, for about 8 minutes or until soft and brown. Add the tomatoes and olives, and cook for another 8-10 minutes until soft and a little bit bubbly. Add the basil.
Toss shell pasta with the eggplant mixture, and stir in the goat cheese until it melts.

Serving Size: Makes dinner for one.
