southwest quinoa salad

Ingredients
2 cups dry quinoa1 cup frozen corn1.5 cups black beans, canned1 cup red pepper, chopped0.5 cups green peppper chopped1 jalapeno pepper, seeded and chopped1 cup red onion, chopped4 tbsp fresh cilantro, choppedJuice of 1.5 limes
Directions
Bring 4 cups water to boil, add quinoa. Bring to boil,
cover and simmer until water is absorbed.
While quinoa is cooking chop all ingredients and thaw corn. Add to large bowl. Add lime juice. When quinoa is done, add to other ingedients, mix well. Serve warm or cold.
