Spicy Pumpkin Soup

1T Olive Oil1C Onion, Chopped3T Whole Wheat Flour1/2t Spicy Curry Powder1/4t Cumin1/4t Ground Nutmet2 Garlic Cloves, Crushed2C Sweet Potato, peeled and cubes (1 large)1/4t Salt2 14oz cans of Veggie Stock1 15oz can of Pumpkin1C Skim Milk1T Fresh Lime Juice
Heat olive oil in a dutch oven over medium-high heat, saute onions for 3-4 minutes, then add flour through garlic for 1 minute.
Add sweet potato, salt, broth and pumpkin and bring to a boil. Reduce heat to med-low and simmer partially covered for 20-25 minutes or until the sweet potatos are cooked. Remove from heat and let cool for 10 minutes.
Puree in blender or use a hand blender. Raise heat to medium then stir in milk and cook for 5 minutes. Remove from heat and add lime.
