Thai Peanut Sauce

Ingredients
1 cup dry-roasted peanuts1 1/3 cups water3cloves garlic2 Tbsp packed brown sugar2 Tbsp lime juice1 Tbsp low sodium soy sauce1/4 tsp hot pepper flakes (optional)1 piece (1 inch) gingerroot peeled and thinly sliced
Directions
In blender or food processor, combine all ingredients and process for 2 minutes. Pour into top of double boiler over boiling water and cook for 30 minutes,stirring occasionally. (sauce can be covered and refrigerated for up to 2 weeks.) serve warm

    Maybe we didn't cook it long enough, but we found the ground peanuts didn't blend very well. We'd try peanut butter next time. - 8/22/10

    I really liked that this was made from peanuts rather than peanut butter. It was really tasty. However I prefer my peanut sauce saltier and tangier so next time I will double or even triple the soy sauce and lime juice. - 1/11/10
