Ingredients
3 cups diced tomato (canned or fresh)3/4 cup finely diced onion (I like to mix white and red onion for a better flavor)1 jalapeno (or serano) pepper, seeded and finely diced1/4 cup fresh cilantro2 garlic cloves, dicedjuice from 1/2 a lime1/2 tsp salt
Directions
Combine all ingredients in a medium bowl.
Cover and let sit in the fridge for at least 12 hours before serving to allow the flavors to meld.
Serve with tortilla chips or as a topping for fajitas, tacos, and quesadillas.
Makes approximately 8 servings.

    I made 2 batches of this for a wedding shower, one with the jalepeno (but with seeds intact), and a milder one with an Anaheim pepper. I also doubled the lime juice amounts in each to add a bit of a twist. Absolutely delicious. Thanks for sharing! - 3/1/09
