Apple Cinnamon Muffins

Ingredients
1 1/4 cup apple, chopped1/4 cup unsweetened vanilla almond milk1/4 cup flax meal1/4 cup whole wheat flour4 Tbsp Stevia2 Tbsp sugar-free maple syrup2 Tbsp eggbeaters (or egg whites)2 Tbsp natural (unsweetened) apple sauce1 tsp vanilla extract1 tsp cinnamon1 tsp baking powder
Directions
Preheat oven to 400 degrees. Combine dry ingredients in a mixing bowl (flax meal, whole wheat flour, stevia, cinnamon and baking powder), mix in remaining ingredients minus apples. Once well combined, gently fold in apples and divide batter amongst 5 cupcake papers in a cupcake tin. Top with additional cinnamon if desired and bake for 18-20 minutes.
