Greek Orzo salad

12 ozs orzo1/4 cup olive oil1 cup crumbled feta cheese1 cup chopped red pepper1 cup chopped yellow pepper3/4 cup Kalamata olives3 tbsp lemon juice1 tbsp white wine vinegar1 tbsp minced garlic1 1/2 tsp dried oregano1 tsp Dijon mustard1 tsp ground cumin
Cook orzo in a large pot of boiling water until tender but firm. Drain. Rinse in cold water, drain well. Transfer to large bowl & toss with a little olive oil. Add crumbled feta, peppers and olives. Combine lemon juice, vinegar, garlic oregano, mustard and cumin in small bowl. Gradually whisk remaining oil in, seasoning with salt and pepper. Add dressing to orzo mixture and toss. Can be prepared 6 hours ahead. Cover and refrigerate .
