Rhubarb Fool

Ingredients
4 cups sliced rhubarb( boil in water for one minute; drain)1 cup packed dates1 cup water1 box extra firm Mori Nu tofu ( other silken varieties work nicely as well but this gives the firmest nicest texture)1 tsp rum extract ( or vanilla)1/2 tsp coconut extract ( opt)1 tsp powdered ginger
Directions
Combine the drained rhubarb, 1 cup water and dates. Simmer till soft. ( about 5- 10 minutes) Place all ingredients in the blender and mix until smooth and creamy. Chill completely. ( becomes firm when cooled)

Serving Size: makes a total of 5-6 cups
