Creamy Garlic Mashed Cauliflower

1 med head cauliflower, cut into large even chunks4 cloves of garlic, minced3/4 cup low sodium vegetable broth1/4 c dried minced onion1/4 tsp celery salt1/4 tsp white pepper(black pepper will work too)
Spray a medium saucepan with cooking spray. Set over medium low heat. Add garlic and cook gently until garlic begins to soften and barely brown.
Add cauliflower, broth, minced onion, celery salt, and white pepper. Gently stir to combine. Raise heat to medium, or until mixture comes to a simmer. Cover and cook for about 10 minutes, or until cauliflower is just fork tender.
Add mixture to a food processor and process until smooth and creamy.
Serve warm, refrigerate leftovers.
