Stuffed Tomato and Zucchini Boats

Ingredients
1/2 pound ground chicken, browned2 tbsp grated onion1 large carrotsalt to taste1 serving cheez-it or other crackers1 egg white1/4 cup grated parmesan cheese2 tomatoes1 zucchini
Directions
Cut Zucchini in half length-wise, then cut each half in half. Scoop out insides, leaving some of the flesh. Cut tomatoes in half and hollow out. Brown chicken. Add onion and carrots. Sautee with chicken until soft. Crush 1 serving of cheez-it or other crackers. Add to meat mixture, then add egg white. Mix well and add parmesan cheese. Spoon into vegetable boats. Bake at 350 in a pam sprayed dish for about 25 minutes.

Serving Size: Makes 8 stuffed zucchini and tomato halves.
