Crunch Crunch Salad (Low Carb)

5 cups broccoli florets1 cup diced celery2 cups Jicama (Yambean)1/2 cup chopped scallions (green onions)1 pound bacon cooked and crumbledDressing1 cup mayonnaise2 tablespoons vinegar1/4 cup Zylitol (Splenda will work)1/2 teaspoon curry powder
Mix all ingredients for dressing and set aside.
Toss together broccoli, celery, Jicama and scallions.
Add dressing and mix until evenly coated.
Add bacon and stir.
Refrigerate until serving
