Stellar Peanut Butter & Banana Oat Cookies

4 Tbsp Butter, Unsalted (half stick), at room temperature1 cup Brown Sugar, packed1/4 cup Honey2 tsp Vanilla Extract1 Egg1 cup Mashed Over-ripe Bananas (approximately 3 large bananas)1 cup Reduced-Fat, Chunky Peanut Butter2 cups Flour1 Tbsp Baking Powder1/4 tsp Cinnamon1/4 tsp Salt1 cup Quick Cook OatsCooking spray
~ Preheat oven to 350 degrees.
~ Cream butter and brown sugar together. Then add honey, vanilla and egg and blend until well mixed.
~ Mix in the mashed bananas and the peanut butter until smooth.
~ In a separate bowl, mix flour, baking powder, cinnamon and salt.
~ Blend the dry mixture into the wet mixture in thirds. Combine thoroughly, but try not to over mix the batter.
~ Gently stir in the oats until incorporated.
COOKING OPTIONS:
1) Regular Cookies - Nutritional Info is Based on These
~ Grease baking sheet with cooking spray.
~ Spoon rounded tablespoon of cookie dough 1-2 inches apart.
~ Bake on top rack for 10-12 minutes.
~ Cookies will spread a little, puff up and turn a light golden brown.
~ Remove from baking sheet and place on cooling rack.
2) Jumbo Cookies - Nutrition is Equal to 2 Regular Cookies
~ Grease baking sheet with cooking spray.
~ Use an ice cream scoop to scoop out the cookie dough and place 2 inches apart.
~ Bake on top rack for 12-15 minutes.
~ Cookies will spread a good bit, puff up and turn a light golden brown.
~ Remove from baking sheet and place on cooling rack.
