Orzo with Peas

Ingredients
14 oz of Vegetable Broth1 Cup of Orzo Pasta2 Tbs. of Butter or Margarine (or you can use olive oil)1 Cup Frozen Peas, thawed1 Cup Bell Peppers (Red, Orange, Yellow)1/8 tsp Black Pepper1/2 tsp Chipotle seasoning
Directions
Bring broth, water, and butter (oil) to a boil. Add Orzo and chipotle seasoning. Reduce heat to medium, stirring frequently so pasta does not stick to bottom of pan (about 10 minutes). When the liquid is about all absorbed by pasta, add peas, peppers, and black pepper. Reduce to low and cook until peas and peppers are heated through.

I used red, orange, and yellow peppers when I made this and it was amazing. Of course this recipe can be adjusted to just about anything you want to add or take out. One of the times I made this I added imitation crab meat for a protein source and ate the dish as a meal with one round Pillsbury croissant. It was very filling and satisfying.

    I was serving this with Basil-Tomato Tuna Steaks (on SparkRecipes) and wanted it a bit Italian...added basil and Parmesan instead of Chipolte seasoning. only used 1tsp butter and 1 t. oil to saute the peppers in. It was a perfect accompaniement. - 8/17/09

    I used chicken broth and left out the peppers. I then added a can of artichoke hearts and some low-fat Mexican cheese blend. Very easy to make and very delicious. - 7/9/09
