BBQ Turkey Meatloaf & Mashed Cauliflower

For the meatloaf:1 egg1 C rolled oats1 small onion, finely chopped1 red bell pepper, finely chopped1/2 C barbecue sauce (divided)1/4 tsp ea salt & pepper1 1/4 lbs lean ground turkey (93% lean)For the cauliflower:1 large head cauliflower, cut into chunks2 T olive oilsalt & pepper to taste
Preheat oven to 350*. Spray a 9x13 baking pan with non-stick spray, set aside. Break and beat egg in a mixing bowl. To the bowl add rolled oats, onions, bell pepper, ¼ C barbecue sauce, salt & pepper, mix well. Add ground turkey to the bowl and mix until combined. Shape the meat in the baking dish into an 8x4” loaf (approx 2” thick). Spread remaining ¼ C barbeque sauce over meatloaf. Bake loaf for 40-45 minutes or until internal temperature is 180*.
While the meatloaf bakes prepare the mashed cauliflower.
Steam cauliflower until very tender. Drain well and place in a food processor. Add olive oil and blend until very smooth (about 1 minute). Season with salt and pepper to taste.
