Bacon, Spinach, and Garlic Spaghetti

Ingredients
8 oz. Brown Rice Spaghetti Pasta4 slices Bacon1/4 cup Extra Virgin Olive Oil1/2 cup Chicken stock5 cloves Garlic, thinly sliced2 cups fresh Spinach leaves
Directions
Cook the bacon in microwave according to package instructions. Set aside and let cool until it is cool enough to chop, and then chop it. Meanwhile, also cook the spaghetti according to package directions. While the spaghetti is cooking, heat the olive oil and chicken stock in a large frying pan over medium heat. Add the garlic and saute it, stirring, for about 2 minutes. Add the spinach and saute, stirring occasionally, until the spinach is wilted and the garlic has begun to turn golden. Add the chopped bacon, and heat through. (Lower the heat if needed to keep the garlic from burning.) Drain the spaghetti, rinse, and add it to the frying pan. Heat through and serve.
