.50 cup all purpose flour1/8 tsp cayenne pepper3 ozs buttermilk.75 cup cornflake crumbs1 lbs uncooked boneless skinless chicken breast in 8 pieces
Preheat oven to 365 deg. Lightly coat an 8X8X2 inch baking dish with nonstick cooking spray; set aside.
Combine flour, salt and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes in two sepapate bowls.
Roll chicken breast pieces in flour mixture and evenly coat side. Next dip chicken into buttermilk and then corn flakes crumbs.
Place coated chicken breast in prepared baking dish. Bake until chicken is done about 35 minutes( there is no need to flip the chicken during baking). Yields 8 pieces.
