Crustless Red Onion Tart or Frittata

4 medium red onions1 tsp each, caraway seeds & chopped rosemary1 clove garlic, siced2 Tbl brown sugar1/4 cup balsamic vinegar5 eggs80g crumbled feta
Oil spray a non-stick frypan and cook the onions, caraway seeds, rosemary and garlic over a gentle heat for 10-15 minutes until the onions are soft & fragrant.
Add the brown sugar and balsamic and increase the heat. Cook for 8-10 minutes until the onions start to caramelise and turn golden. Remove and set aside.
Preheat the oven to 190C. Line a small non-stick frypan with damp baking paper. Layer the feta over the paper, then the onions. Whisk the eggs together with salt and pepper to taste and extra rosemary if desired. Pour into the pan covering the feta and onion base.
Bake in the oven for 30-40 minutes or until puffed and golden.
