High Protein Vegetarian Chili

1 package Smart Ground (ground beef substitute1 medium Onion, chopped3/4 c carrot, diced1 c. celery, chopped1 lb can whole tomatoesCanned black beansCanned kidney beansSpicy pepper rings (Vlasic Zesty Banana Pepper rings)1 Red pepper, medium1 c. Corn kernals (canned or frozen)Mexican Chilli powder
"Brown" Smart Ground (minced beef substitute) and onion.
Add:
- Tomatoes
- Kidney and Black Beans (rinsed)
- Carrot, celery and red pepper
- Corn kernals
- Hot pepper rings (to taste)
- Chilli powder (to taste)
Simmer about 2 hours or longer until vegetables are soft. The longer it sits the better the flavor, so you can make it the night before.
Makes 6 large servings.
