Spinach-Feta Breakfast Wrap

1 egg1 egg white1 (7.5-inch) whole-wheat tortilla1/4 cup sliced mushrooms 1/4 teaspoon black pepper2 cups spinach 2 tablespoons crumbled feta
Whisk the eggs in a small bowl.
Place the tortilla on a microwave-safe plate and heat on high for one minute.
Coat a small skillet with nonstick spray, then place over medium heat. Add the mushrooms and pepper and cook for 2 minutes. Stir in the spinach, and cook for 1-2 minutes, until wilted.
Add the eggs and cook, stirring often, until they are set, about 2 minutes.
Place the egg scramble in the center of the tortilla, then top with the feta. To wrap, fold up one end, then both sides.
Serve immediately, or wrap in foil to take it on the go.
