Chicken Liver and Veggie Scramble

1 Chicken Liver boiled and chopped3/4 C Zucchini skin on chopped3/4 C Yellow Squash (summer squash) chopped3/4 C Red Pepper chopped1/2 C Onion chopped1 C Mushrooms with stems chopped5 Egg Whites
Boil chicken liver until cooked through, a few minutes. Wash and chop Zucchini, yellow squash and red pepper. Wipe off mushrooms with a damp paper towel and chop. Chop onion. Spray fry pan with Olive Oil cooking spray and saute veggies over medium heat until tender. Add chicken liver. Beat egg whites with a few tablespoons of water and add to pan. Stir for a few minutes until cooked through.
