Spanish Tortilla with Spinach

Ingredients
1+ cup of cooked (frozen) spinach1/2 of large onion125 grams of diced (raw) potato100 grams of Queso Oaxacaoreganosaltolive oil (tiny bit)
Directions
saute spinach and onions
cube potato and cook in a little water in the microwave until done
chop cheese
beat eggs
add all ingredients to eggs with some oregano, salt and pepper to taste
spray pan with non-stick spray
stir ingredients so that all is coated
pour eggs into hot pan
turn heat to low and cook until solid
turn out of pan and eat!

Serving Size: Makes two mains or 4-8 tapas
