Low-carb, Sugar-free Vegan Chocolate Ice Cream

Ingredients
2 cans Trader Joe's Light Coconut Milk (pre-chilled in fridge)4 Tblsp. unsweetened cocoa powder12 level tiny scoops pure stevia powder (KAL or Trader Joe's)2 Tsp. real vanilla extract5 dashes salt1/4 Cup very hot water
Directions
Place cocoa powder, stevia powder and salt in a medium bowl. Whisk together. Add vanilla extract and hot water and continue to whisk until smooth and syrup-like. Add coconut milk and whisk until well-blended, then pour immediately into ice cream freezer, and churn until soft-frozen. Serve immediately or store in freezer. You may also chill the ice cream mixture in refrigerator before placing in ice cream maker, for quicker freezing.
