Cranberry walnut spiced banana bread

1/2 cup granulated sugar1/2 stick salted butter4 oz. unsweetened applesauce4 egg whites (large)4 ripe bananas1 tbsp. milk (can use skim to lower calories)1 tsp. cinnamon1 tsp. pumpkin pie spice1 cup chopped walnuts1/4 cup dried cranberries1 tbsp. vanilla extract2 cups all purpose flour (can sub whole wheat flour)1 tsp. baking soda1 tsp. baking powder
1. Preheat oven to 325F. Spray pam or similar spray to grease 9x5x3 loaf pan.
2. Cream the sugar and butter in a mixing bowl until light and fluffy. Incorporate apple sauce. Add egg whites one at a time, beating well after each addition.
3. In a small bowl, mash bananas with a fork. Mix in milk, cinnamon, pumpkin pie spice, cranberries, and chopped walnuts. In another bowl, mix flour, baking soda and baking powder.
4. Add the banana mixture to the creamed mixture and stir until just combined. Slowly add dry ingredients and mix just until flour disappears.
5. Pour batter into prepared pan and cook for 1 hour to 1 hour and 10 min, until a toothpick inserted in the center comes out clean. Set aside to cool on rack for 15 min. Remove bread from pan, invert onto rack and cool completely before slicing.
Serving Size: makes one loaf approx. 8-10 pieces depending on how you slice
